The school year has begun in our neck of the woods! Our little one started second grade this past Monday and we have yet to adjust to early mornings again. Our mornings are just a bit earlier because I’m a big believer in breakfast. Cold cereal doesn’t cut it in our house – breakfast needs to be hot, hearty, and healthy. These muffins make my job much easier in the morning. Each muffin is loaded with 10 whole grains, healthy protein and fiber. I can whip up a batch on Sunday afternoon and we’ve got a hot, nutritious breakfast all week long. They also freeze very well.
- 2c Thrive 10 Grain Pancake Mix
- 1/2c Thrive Sausage Crumbles
- 1/3c Thrive Brown Sugar
- 1/4c Thrive Whole Egg Powder
- 1-1/3c Water
Preheat your oven to 350 and grease a muffin tin well (or use cupcake liners). Combine all ingredients and allow to rest for 10 minutes. After resting, add additional water if needed to thin batter. Fill muffin tins 2/3 full and bake for 20-25 minutes or until golden brown. Serve hot – delicious when topped with jam or syrup!

Was so excited to try this recipe for breakfast this morning…I didn’t have any Thrive egg powder, (I have all the other ingredients) so I substituted it with one large egg. Other than that I stayed very true to the recipe. The real egg may be the reason for the denser heavier (muffin result and also why the majority of it stuck to my wrappers…Unfortunately not a hit in my family (kids and shared with my sister). They aren’t BIG fans of the THRIVE ten grain pancake mix on it’s own (which is why I’m looking for different ways to use it up) bc they prefer my fresh ground whole wheat from scratch. I’ve made muffins before that stuck a little to the wrappers and my kiddos scraped off the extra muffin from the wrappers with their teeth bc the taste was SO good. I LOVE the concept and creativity, I appreciate the simplicity of ingredients and technique, but the end product for me was a miss. Was worth trying, super simple and easy….

I’m sorry these didn’t work well for you. I have to admit that we aren’t huge fans of the 10 grain pancake mix either – we much preferred the old mix and I hope they go back to it someday. As for the muffins sticking to the wrappers, if you make them again you might want to try making them without wrappers. I just grease my tin well and haven’t had a problem with them sticking. I had that same thought when they started sticking. I’m ordering the THRIVE whole egg powder next month to try it again, bc truly it’s SO simple that it’s worth doing it exactly as you have without wrappers and with THRIVE egg powder.
