These little snacks are super yummy and a great way to sneak healthy sweet potatoes into picky little kids. Or picky husbands. The batch that I made barely made it an hour in the fridge before the three of us devoured every single bite – and I’m the only one in this house that likes sweet potatoes. Next time I think I’ll add some chopped roasted nuts – pecans or walnuts would be fantastic.
- 1c Thrive FD Sweet Potatoes*
- 1/4c Thrive Macaroon Cookie Mix + More for Coating
- 2T Thrive Brown Sugar
Simmer the sweet potatoes for 20 minutes or until very soft. Drain well and transfer to large bowl. Add sugar and macaroon cookie mix. Stir well and let rest until sweet potatoes are cool. Roll into small balls (mine were about 1T) then roll each ball in additional macaroon cookie mix. Chill for at least 1 hour before serving.
* Thrive Sweet Potatoes are currently unavailable. I will update this post once they are available for purchase again! In the meantime, you can substitute a regular large sweet potato.
